Rainbow Coconut Bars

With the cold weather setting in, I can now make a few chocolate based treats for the tripolatas (and for me too). Since the middle of spring I've had a few ideas floating around, and these Rainbow Coconut Bars are one of the simplest to whip up.



Like all great recipes, they are no bake and require only three ingredients, some food colouring, and a baking dish or mould to set them in.

Here's what you'll need: makes approx. 24 bars

400g condensed milk
200g desiccated coconut
250g-300g of chocolate (milk or dark)

Here's what you'll need to do:

1. Pour the condensed milk into a bowl then add the coconut and stir, If the mixture is extremely soft, add more coconut.

2. Divide the mix between three or four small bowls and add your chosen colours. I wanted pastel tones so only dabbed in a little of the gel colours. You can go as bright and bold as you want for your Rainbow Coconut Bars.

3. Layer the mix into baking dish or mould lined with cling film. Place it in the fridge for a few hours or overnight to firm up.

I used a brownie tray. The mix was divided across six moulds

4. Take the coconut out of the fridge and cut into slices (I cut each mould into four). Place these into the freezer to harden.

 5. When you're ready, melt the chocolate either in the microwave or in a clean bowl over boiling water. Using a fork, dip each bar into the chocolate then set aside whilst the chocolate sets.

6. Once all the coconut bars have been dipped you can place them in the fridge to set faster, if necessary. These are best stored in a cool dry place or in the fridge.

Surprisingly the tripolatas had never had one of these before and, as with all my recipes, they bombarded me with questions about how I made it (not that they will ever want to make it themselves).

There was a  little chocolate left over so I used it to make a small block of chocolate bark, layering it with cereal hoops, fudge and sprinkles. It's sort of a mini version of my Triple Chocolate Bark
