Creamy Chicken and Pasta
I made this for my boys today and they really enjoyed it. I've made similar dishes before (the recipes for which I will post ASAP) and they always seem to like it. This yielded enough for 2-3 toddler portions. I usually make this with macaroni as its easier for the boys to eat but any pasta shape will do.
2-3 chunks breast fillets
Approx 300g pasta
2-3tsp Butter
2 cloves of garlic
1 tbsp flour
Approx 300ml of milk
2 handfuls of grated cheese
Parsley
Salt and pepper
Boil the chicken fillets in salted water.
Also cook the pasta according to pack instructions. When the chicken has cooked through, chop it into bite sized pieces and set aside.
Over a medium heat, melt the butter in a pan and add the garlic, fry for 1 minute.
Add the flour and stir.
Add a little milk and stir until the sauce begins to thicken. Add more milk, reserving some incase it is needed later. Continue to stir until the sauce thickens.
Add the chicken and then season. If the sauce has become to thick add more milk.
Once the desired consistency has been achieved, add the pasta and stir until it is coated in the sauce.
Lower the heat and then add the cheese. Continue to stir until the cheese has melted. Adjust seasoning if necessary.
Serve.
