Almond Craisin Raisin Fruit Drops




This weekend was very busy, with our senior Pastor visiting from Nigeria. We had a late meeting at the U house on Friday night, and our Pastor and senior Pastor stayed over.

So my Saturday morning was spent making a hearty fry up for the tripolatas,  Mr U and the Pastors (plus myself of course). Whilst the sausages were frying I decided that with Mr U at home, it was the perfect opportunity to whip something up without being distracted by the trips.


I was going to bake,  however, I had already baked Palmiers (click here for the link) and Apple Cinnamon Swirls (recipe coming soon) during the week and Mr U's thoughts towards my baking are focused more towards the electricity bill.

With actual baking out of the question the only option left, based on what I had in the cupboards and the amount of cleaning that would be required afterwards, was Fruit Drops. So far I've created three Fruit Drops recipes, Breakfast, CranApple and Tropical, it was now time to create a fourth.

The method is the same as the other Fruit Drops recipes, which is what makes these so great, they can easily be adapted if you run out of a particular ingredient like I almost did with the tripolatas picking at the packets of cranberries and raisins.

So here's what you'll need:
1 cup of almonds
1 cup of raisins
1/2 cup of dried cranberries
1/4 cup of dried apples
1/2 tsp almond extract (or enough to help bind mixture)

Add the almonds to a food processor and mix until it's almost finely ground

Add the raisins and cranberries and mix again until they have combined well with the almonds

Add the dried apples and mix again

Finally add the almond extract and give it one more mix. Add more almond extract or a few drops of water if the mix still feels dry.

Form the mix into balls or if like me you have cake pop moulds,  use them to form the drops.

Place in the fridge for a few hours.

I then wrap mine in cling film and place in a jar.
