Coconut and Jam Roly Poly Biscuits
It's been a long time since I baked anything, so I thought it was only fitting that my come back recipe be these Coconut and Jam Roly Poly Biscuits.
I first made these a while back and wasn't happy with the texture, so I made a little adjustment to the baking temperature and placed the baking sheet on a lower oven rack and it worked. They turned out exactly how I wanted them.
I've used strawberry jam in these biscuits, but you can use whatever jam you have to hand.
Here's what you'll need: Recipe yields 2 logs. 1 log makes approx 30 biscuits
250g softened butter
140g castor sugar
1 egg yolk
2tsp coconut flavouring
300g plain flour
Jam (a few tbsp, more if you want thicker jam streaks)
Approx 2 handfuls of dessicated coconut

Here's what you'll need to do:
1. Cream together the butter and sugar, once it is pale and fluffy, add the egg yolk and flavouring and mix.
2. Sieve the flour and mix until the dough comes together. Divide the dough in two.
3. Roll both out into small squares, wrap in clingfilm and place in the fridge for 30mins - 1hr to chill.
4. When ready, take out one square of dough mix and roll out into a rectangle (about 23 x 30 cm).
5. Spread the jam over the dough leaving one of the longer edges free of jam. Starting from the longer jammy edge, roll the dough into a log, sprinkle the counter or board with the coconut and roll the log into the coconut until covered.
6. Wrap the log with cling film and place in the freezer, until firm or when needed. Repeat with the other half of the dough.
7. Preheat the oven to 150 °C/302 °F, and bring one of the logs out of the freezer. Unwrap the cling film and, using a sharp knife, slice 1cm thick discs out of the log. (If your log is too hard to cut into, leave it to defrost for a few minutes)
8. Place the discs on a baking sheet and bake in the oven for
15-17 minutes, rotating the baking sheet in the last couple of minutes.
Bring out the second log when the first is baking or you could leave it for another occasion.
9. When the biscuits are done, transfer them to a cooling rack then store in an airtight container.
